Lime - Jalapeno Chicken


Here you go - just in time for that diet you are going to begin soon!  How to make plain ordinary chicken breasts taste incredible!  Give this one a try - it is easy and a real taste treat!  (It is extra easy if someone else does the grilling - Thanks Kirby!!)

  • 1/4 cup lime juice (concentrated is fine - fresh is better)
  • 2 tablespoons canola oil
  • 1 tablespoon white vinegar
  • 1 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1 jalapeno, sliced (sissys need to remove the seeds)
  • 1/2 small onion sliced
  • 1 1/4 pounds boneless, skinless chicken breasts, trimmed of fat
  1. Whisk lime juice, oil, vinegar, cumin and salt in a small bowl. Stir in jalapeno and onion. Place chicken in a shallow baking dish and pour the marinade over it, turning to coat both sides. Cover and refrigerate for at least 1 hour, turning once, or overnight.
  2. Preheat grill to high heat.Grill the chicken until cooked through and no longer pink in the middle.
  3. Meanwhile, sauté the jalepenos and the onion in the marinade until the vegetables are tender – about 5 minutes.
  4. Let chicken cool slightly; serve with jalapeno - onion mixture.
Yield: 8 servings
